Preparing a good cut requires a lot more than just driving to the store. It takes at least two years to go from conception to consumption, including time traveling from farms and feedlots to packing plants and food shops.
Ultimately, a 1,300 pound steer yields about 641 pounds in retail beef cuts, ranging from T-bones and prime rib, to its liver, tongue, and sweetbreads.
At Magro’s, all our beef is locally sourced from nearby farms – growth hormone and steroid free -- and butchered at our Auburn packing plant.
